Honey-iced Coffee Cake ( a cake from Debbie)

Ingrediente necesare

Debbie is a great cake cooker - much better than me. She can turn the simplest of recipes into the greatest of cakes. This cake is supposed to last for 3 days - it rarely lasts 3 hours.

Cake

2 Tbspns very strong black coffee
125g butter
2 tspns vanilla
0.75 cup brown sugar, firmly packed
2 eggs
1 cup SR flour
0.25 cup custard powder
0.33 cup milk

Honey Icing
30 g butter
1 Tbspn very strong coffee
1 tspn honey
1 tspn vanilla
1 cup icing sugar

Mix all ingredients until combined and then beat for 3 minutes. Place into tin and bake in mod oven for 40 minutes. Stand for 5 minutes and then turn out and cool. Ice when cold.

Make the icing by melting the butter with the coffee. Add the honey, vanilla and half of the icing sugar. Gradually add the rest of the icing sugar until icing is of a soft spreadable consistency.
