Chelsea Bun a la Yeast

Ingrediente necesare
Yeast Dough
225g plain flour
25g castor sugar
60g butter
0.5 tspn cinnamon
1 egg,
beaten 7 - 10g dried yeast
0.5 tspn salt
4 Tblspn milk
Filling additional
60g butter
0.33 cup brown sugar
grated lemon peel
1.5 - 2 cup mixed dried fruit and peel
brandy or rum
0.5 tspn cinnamon
Glaze
golden syrup or honey
Make a yeast dough.
Roll the dough out to 30cm x 23cm oblong.
Cream the additional butter and sugar and spread over the dough. Sprinkle on the fruit and cinnamon, and drizzle with a little brandy or rum. Roll up lengthwise, and cut into around 10 slices of 2.5cm each. Place in a greased tin, close together, and prove until double in size.
Bake at 200 C for 25 - 30 minutes. Glaze.
